The new section, available here, offers a basket of authentic goodness, whose ingredients tell, more than anything else, the value of raw materials and the strong link with the Terra Madre.
The heart and soul of our company are Tuscan. With pride we are registered in the Register of Farmers Guardians of Germplasm and for the protection of the seed and for a healthy cultivation, we sow the fields only with ancient Tuscan wheat germs.
The soft grains that we have in custody are the Frassineto, Gentil Rosso and Inallettabile all excellent for desserts and bread.
Ancient durum wheat of the variety Senatore Cappelli, cultivated following the principles of Natural Agriculture Shumei, wholemeal flour obtained from stone milling and cold water: these are the simple elements at the base of the production of our company, which produces different types of pasta, with the aim of giving back to the palates of today its ancient flavor.
As the ingredients are unique and essential, processes also follow slow rhythms, such as those that require nature to complete its plans.
First the bronze drawing is carried out, then the drying process is carried out, a slow and natural process that takes place at a temperature of less than 38 degrees, to leave unaltered the quality of the pasta, which translates into more taste and flavor.
We illustrate in detail the products available: from the pasta shapes dear to the Italian tradition – spaghetti, tagliatelle, linguine, penne, fusilli and paccheri – to the most typical of the Tuscan territory – lilies but especially the “pici” that we offer in the most faithful version to the original recipe, that is, hand-made and obtained with whole wheat flour.
For those who do not want the pasta but the raw material, to try directly in the kitchen, we provide both wheat and wholemeal flour: the old durum wheat – which has not undergone any modification by man and whole wheat flour, obtained from the stone milling of the grain as it is, without being stripped of the germ and the bran.
